A doublet is when 2 materials are bonded together. Doublets can be used to make the most of valuable materials by backing them with a less expensive material, especially when the backing won't be seen, like in a bezel setting. In addition to making the most of valuable materials, doublets can provide extra support and shock resistance, particularly for stones prone to cracking. 

The quarter is in the picture for scale. A quarter is about 1". Also, the rectangle pricing stickers are 1" x 1/2". That too can help you get a feel for the size of the cabs.
